Place jelly, crystallized ginger, and lemon juice in a large microwavable bowl. Microwave on high for 30 to 60 seconds, just until jelly is melted and warm. Stir in rosemary, lemon thyme, lemon verbena, or tarragon and strawberries. Serve immediately or let stand at room temperature up to 2 hours.
Serve with lamb or pork chops, chicken, or ham. Or top toasted baguette slices with a slice of goat cheese and one or two of the candied berries. Makes 2 cups (8 servings).
