Lightly coat a 9x9x2-inch baking pan with cooking spray; set aside. In a medium bowl stir together gingerbread mix and water until combined. Stir in 1 tablespoon of the crystallized ginger. Spread batter in the prepared baking pan.
Bake in a 375 degree F oven for 20 to 25 minutes or until a wooden toothpick inserted near the center comes out clean. Cool slightly in pan on a wire rack.
Serve warm, topped with Vanilla Sauce and the remaining crystallized ginger. Makes 12 servings.
In a small bowl stir together vanilla yogurt, light sour cream, and vanilla. Cover and chill until ready to serve. Makes 2/3 cup.
