Learn about BHG's Editorial Process Published on June 14, 2011 Print Rate It Share Share Tweet Pin Email Photo: Scott Little Prep Time: 20 mins Cool Time: 30 mins Bake Time: 30 mins Total Time: 1 hr 20 mins Servings: 8 Jump to Nutrition Facts Ingredients 4 slightly beaten egg whites 2 slightly beaten eggs ⅓ cup granulated sugar 3 tablespoon honey 2 tablespoon fruit-flavored liqueur (orange or raspberry) or 1/2 teaspoon rum extract plus 2 tablespoons orange juice 1 teaspoon vanilla Dash salt 1 ½ cup plain nonfat yogurt 1 cup all-purpose flour 3 cup raspberries, blueberries, and/or sliced strawberries 2 teaspoon sifted powdered sugar Raspberries (optional) Edible flowers Directions In a large bowl beat together egg whites, whole eggs, granulated sugar, honey, liqueur or rum extract and orange juice, vanilla, and salt with a wire whisk or an electric mixer on low speed until light and frothy. Stir in yogurt until mixture is smooth. Add flour; beat until combined and mixture is smooth. Grease a 10-inch quiche dish; arrange desired berries in bottom of dish. Pour batter over fruit. Bake in a 375 degree F oven for 30 to 35 minutes or until center appears set when shaken. Cool on a wire rack for 30 minutes. Serve warm. Just before serving, sprinkle with powdered sugar and, if desired, garnish with fresh raspberries and edible flowers. Makes 8 servings.
