Directions

  1. Combine the raisins, boiling water, 1/3 cup brown sugar, rum, and nutmeg in a small mixing bowl. Cover and let stand for 30 minutes.
  2. Peel the plantains. Cut plantains diagonally into 1/2-inch slices. Cook plantains in the 2 tablespoons hot butter in a very large skillet* over medium heat for 4 to 5 minutes or until lightly browned, turning once halfway through cooking time. Add the 2 tablespoons brown sugar. Cook and gently stir over medium-high heat for 2 to 3 minutes or until sugar is melted and plantains are glazed. Remove plantain mixture to a serving bowl; keep warm.
  3. Carefully stir raisin mixture in the same skillet and bring to a gentle boil over medium-low heat. Gently boil for 3 to 4 minutes or until mixture thickens slightly. Remove from heat. Stir in the 1 tablespoon butter. Pour raisin sauce over plantains and serve warm with vanilla ice cream. Makes 8 servings.
