  • In a large bowl beat together eggs, milk, sugar, vanilla, orange peel (if desired), and cinnamon. In an ungreased 2-quart square baking dish toss together bread cubes and dried fruit; pour egg mixture evenly over bread mixture. Press lightly with back of large spoon to moisten all bread.

  • Bake, uncovered, in a 350 degree F oven for 40 to 45 minutes or until puffed and a knife inserted near the center comes out clean. Cool slightly. If desired, serve warm.

I absolutely loved this recipe! My mom used to make it for my sister and I when we were younger and now I'm making it for me and my husband. We prefer the "thicker" consistency bread puddings because we put a few scoops of ice cream on top. I can't wait to try different flavors. I wan't to try adding sliced almonds and cranberries to this (instead of raisins) and adding almond extract in place of some vanilla. Even a savory one sounds great! Add ingredients that you would normally make a quiche with, and, voila! Getting more hungry by the second!
