Directions
- For custard, in a heavy medium saucepan combine eggs; half-and-half, light cream, or milk; and sugar. Cook and stir over medium heat until mixture just coats a metal spoon. Remove from the heat. Quickly add brandy, and cool custard by placing the saucepan in a sink or bowl of ice water for 1 to 2 minutes, stirring constantly. Pour custard mixture into a small mixing bowl. Cover surface with plastic wrap and chill at least 1 hour or until serving time.
- In a medium skillet cook pear slices, covered, in margarine or butter over medium-low heat for 4 minutes; uncover and cook for 2 to 3 minutes more or until just tender. Remove pear slices with a slotted spoon.
- To serve, place one slice of pound cake on each of four dessert plates. Spoon one-fourth of the cooked pear slices atop each cake slice. Top each serving with one-fourth of the custard. Sprinkle each serving with pecans. Makes 4 servings.
