Directions

The day before:

  1. In a Dutch oven cook tortellini according to package directions, omitting any oil and salt and adding frozen peas, carrots, and sweet pepper during the last 3 minutes of cooking; drain. Rinse with cold water; drain again. Transfer mixture to a bowl or storage container. Stir in cheese, salami, tomatoes, green onions, olives, and parsley. Cover and chill overnight.
  2. If using, prepare Dijon Vinaigrette. Transfer to a storage container; cover and chill overnight.

Tailgate day:

  1. Tote tortellini and vinaigrette in an insulated cooler with ice packs. Before serving, stir vinaigrette well. Pour vinaigrette over tortellini mixture; toss gently to coat.

  1. In a small saucepan cook and stir garlic, minced, in 2 tablespoons vegetable oil over medium heat until garlic is fragrant and just starting to brown. Immediately pour garlic mixture into a blender. Add white wine vinegar, Dijon-style mustard, sugar, salt, and ground black pepper. Cover and blend for 10 seconds. With the machine running, slowly add 1/2 cup vegetable oil in a steady stream through the opening in lid until mixture is thickened.
