Directions

  1. Line an extra-large baking sheet with waxed paper; set aside. In a large saucepan bring sugar, butter, and half-and-half to boiling, stirring to dissolve sugar. Remove from heat. Stir in chocolate pieces, cocoa, vanilla, and mint extract. Stir until chocolate melts and mixture is smooth. Stir in oats, coconut, and almonds.
  2. Drop by rounded teaspoons onto prepared baking sheet or into paper bake cups set on baking sheet. Let stand about 1 hour or until set.

Layer the pieces between sheets of waxed paper in an airtight container; cover. Store in the refrigerator for up to 1 week or freeze up to 1 month.
