Cucumber Radish Slaw

  • ¼ cup cider vinegar

  • 2 tablespoon extra-virgin olive oil

  • 1 teaspoon sugar

  • ¼ teaspoon salt

  • ¼ teaspoon ground black pepper

  • 4 cup thinly sliced English cucumber

  • 2 cup radishes, trimmed and thinly sliced

  • 1 cup red sweet pepper strips

  • ¼ cup finely chopped green onion (2)


  1. In a large bowl whisk together vinegar, oil, sugar, salt, and black pepper. Add cucumber, radishes, sweet pepper, and green onion; toss gently to coat. Serve immediately or cover and chill for up to 2 hours.
