Cucumber, Olive, and Dill Salad


Summer, here we come! Fresh, crispy cucumbers pair perfectly with tangy red onion and Kalamata olives. Serve this cool-as-a-cucumber salad side at any picnic or potluck for a surefire winner.

  • ¼ cup red wine vinegar

  • 2 tablespoon fresh dill, chopped

  • 1 tablespoon canola oil

  • 2 teaspoon granulated sugar

  • 1 teaspoon salt

  • 3 medium English cucumbers, thinly sliced

  • ½ cup red onion, thinly sliced

  • ½ cup sliced and pitted Kalamata olives


  1. In a large bowl combine vinegar; chopped dill, oil, sugar; and salt. Stir in cucumbers, red onion, and olives. Cover and chill at least 2 hours before serving.
