Directions

  1. In a small bowl combine oil and garlic; set aside.
  2. Trim tops and bottoms of ciabatta rolls to make flat surfaces. Brush outsides of rolls with oil mixture. Spread insides of rolls with mustard. Place one slice of the cheese on each roll bottom. Top with pickles. Divide pork evenly among roll bottoms; top with bacon and the remaining four cheese slices. Replace roll tops.
  3. Heat a large grill pan or skillet over medium heat. Add sandwiches. Weight down with a heavy skillet. Cook 2 to 3 minutes or until bread is toasted. Turn sandwiches over, weight down, and cook 2 to 3 minutes more or until bread is toasted and cheese is melted.
  4. Cut each sandwich into four portions.
