Directions

  1. In a large saucepan or Dutch oven combine red salsa, beans, broth, the water, ham, and cumin. Bring to boiling; reduce heat. Simmer, covered, for 10 minutes.
  2. Ladle soup into bowls. If desired, top with 2 tablespoons sour cream and tortilla chips.

Cuban Black Bean Soup with Peppers:

Prepare as above, except substitute 2 cups frozen sweet pepper and onion stir-fry vegetables for the ham. Per serving (regular or with peppers): 175 cal., 6 g fat (3 g sat. fat), 12 mg chol., 1,359 mg sodium, 26 g carb., 8 g fiber, 10 g pro.
