Diagonally cut each wonton wrapper into quarters. Lightly coat one side of the wrappers with cooking spray. Place the wonton pieces, cooking spray side down, in a single layer on a large microwave-safe platter. Lightly coat the second side of the wonton wrappers with cooking spray.
Microwave on 100 percent power (high) for 1 minute. Carefully turn chips over. Microwave for 20 to 60 seconds longer or until chips are lightly browned and crisp, checking every 20 seconds.
Carefully push chips toward the center of the platter; sprinkle with cheese. When cheese begins to melt, sprinkle with green onion and top with the yogurt, taco sauce, and, if desired, jalapeno slices.
