Crispy Delicata Rings with Herbed Buttermilk Dip

  • Preheat oven to 400°F. Line two large baking sheets with foil; coat with nonstick cooking spray.

  • Place flour in a shallow dish. In a second dish combine mayonnaise, buttermilk, and mustard. In a third dish combine panko, parsley, 1/2 tsp. salt, and 1/2 tsp. black pepper.

  • Dip one ring in flour; shake off excess. Dip in mayo mixture; let excess drip back into dish. Coat evenly with panko mixture. Place on prepared baking sheet. Repeat with remaining rings.

  • Bake 15 minutes or until bottoms begin to brown. Turn rings; rotate pans. Bake 8 to 10 minutes more or until rings are brown and tender; let cool 5 minutes. Serve warm with Herbed Buttermilk Dip.

*Tip

Use a melon baller or a spoon to scoop out seeds from ends of squash.

These are excellent, I didn't have buttermilk so I used my coconut beverage. Great hot or cold.
