Crispy Delicata Rings with Herbed Buttermilk Dip

Crispy Delicata Rings with Herbed Buttermilk Dip

Directions

  1. Preheat oven to 400 degrees F. Line two large baking sheets with foil; coat with nonstick cooking spray.
  2. Place flour in a shallow dish. In a second dish combine mayonnaise, buttermilk, and mustard. In a third dish combine panko, parsley, 1/2 tsp. salt, and 1/2 tsp. black pepper.
  3. Dip one ring in flour; shake off excess. Dip in mayo mixture; let excess drip back into dish. Coat evenly with panko mixture. Place on prepared baking sheet. Repeat with remaining rings.
  4. Bake 15 minutes or until bottoms begin to brown. Turn rings; rotate pans. Bake 8 to 10 minutes more or until rings are brown and tender; let cool 5 minutes. Serve warm with Herbed Buttermilk Dip.

Use a melon baller or a spoon to scoop out seeds from ends of squash.

Directions

  1. In a small bowl combine yogurt and buttermilk. Stir in chives, parsley, dill weed, garlic, onion powder, black pepper, and salt.
