8 cups

  • 1 12-14 ounce pkg. smoked chicken or pork sausage link(s), sliced

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 12 ounce dried rigatoni pasta

  • 1 14.5 ounce can reduced-sodium chicken broth

  • 1 14.5 ounce can petite diced tomatoes, undrained

  • 1 ½ cup water

  • 1 teaspoon dried Italian seasoning, crushed

  • ½ teaspoon paprika

  • 1 cup frozen peas

  • ¾ cup heavy cream

  • ¼ cup grated Parmesan cheese

  • 2 tablespoon chopped fresh basil

  • Crushed red pepper (optional)

  1. In a 4- to 6-qt. pot cook sausage and onion over medium heat until sausage is browned and onion is almost tender, about 8 minutes. Add garlic; cook 2 minutes more.

  2. Stir in the next six ingredients (through paprika). Bring to boiling over medium-high heat. Reduce heat. Simmer, covered, 12 to 15 minutes or until pasta is tender, stirring frequently.

  3. Stir in the peas and cream. Cook and stir over medium-high heat until heated through, about 3 minutes. Remove from heat; stir in Parmesan cheese and basil. Let stand, covered, 5 minutes. Top servings with additional basil, Parmesan, and, if desired, crushed red pepper.
