Creamy Roasted Garlic and Mushroom Linguine

For a more distinct flavor and color, opt for a bulb of black garlic in place of the roasted garlic.

  • 1 tablespoon olive oil

  • 3 tablespoon thinly sliced shallot

  • 6 cup sliced fresh cremini mushrooms (16 oz.)

  • cup dry white wine

  • cup reduced-sodium chicken broth

  • 2 sprigs fresh thyme

  • 6 ounce dried whole wheat linguine

  • 1 bulb black garlic or roasted garlic

  • 3 tablespoon heavy cream

  • ½ teaspoon kosher salt

  • ¼ teaspoon freshly cracked black pepper

  • 3 tablespoon shaved Parmesan cheese


  1. For sauce, in a 12-inch skillet heat oil over medium-high. Add shallot; cook and stir 3 minutes or until starting to soften. Add mushrooms; cook 5 minutes or until tender, stirring occasionally. Stir in wine, broth, and thyme. Bring to boiling; reduce heat. Simmer, uncovered, 7 to 10 minutes or until sauce is reduced by one-third.

  2. Meanwhile, cook pasta according to package directions; drain.

  3. Squeeze garlic from paper husks into a small bowl and coarsely mash with a fork. Stir garlic, cream, salt, and pepper into sauce. Simmer, uncovered, 5 minutes more or until slightly thickened. Remove and discard thyme sprigs.

  4. Add cooked pasta to sauce in skillet; toss to coat. Sprinkle servings with cheese.
