Creamy Broccoli-Bacon Salad

With only 13 g carb, this low carb broccoli salad recipe makes it easy to enjoy a backyard barbecue while sticking to a low carb diet. Broccoli is one of our favorite low carb vegetables and when tossed in a mayo dressing and topped with a sprinkling of raisins and bacon we can't resist it!

Creamy Broccoli-Bacon Salad

Directions

  1. In a large bowl combine mayonnaise, raisins, onion, sugar, and vinegar. Add broccoli; stir to coat. Cover and chill for 2 to 24 hours. Before serving, stir in bacon and sunflower kernels.

I have been making this recipe for 20 years with the same ingredients as yours! It is so well-rounded that we frequently eat it by itself for a meal! One of my most favorite recipes of all time!

Seriously? A salad? I'm sorry. Do you ask Minnesotans what dish is their go too? Born and raised in the state, not transplant. It surprises me that this and the "grape salad" a few years ago were mentioned.
Tator tot hotdish would be hands down! Even our state senators have made this for one of their dish making events on capital hill.

Oh, no, no, no! Please do not do this recipe as written! I use this a lot. Take the mayo, vinegar and sugar and mix separately as a dressing! Mix those well and pour over the broccoli, raisins and bacon and other ingredients. That grainy sugar needs to dissolve in the vinegar and mayo. Otherwise a great recipe and one that I have always had compliments on. I also use a similar one that uses a more Asian-flavored dressing w/soy sauce, vinegar and sugar. Both are good!
