  • Preheat oven to 375°F. Line a 15x10x1-inch baking pan with foil and coat lightly with nonstick cooking spray; set aside. In a large bowl combine ground beef, 2 tablespoons cranberry sauce, curry powder, salt, eggs, bread crumbs, green onions, and 1/4 cup pistachios; mix thoroughly. Shape meat mixture into an 8x5-inch loaf in prepared pan. Bake for 40 minutes; top with remaining 1/2 cup cranberry sauce. Bake for 20 minutes more or until an instant-read thermometer inserted in meatloaf registers 160°F. If desired, top with additional pistachios and/or cilantro.
