Cranberry Fruit Jellies

Directions

  1. Line a 2-quart square baking dish with parchment paper, allowing paper to hang over edges; set aside.
  2. In a 2-quart saucepan stir together 1 cup of the sugar and pectin. Add applesauce, juice, and salt. Bring just to boiling, stirring constantly. Add remaining 1 cup sugar and return to boiling, stirring to dissolve sugar. Clip on a candy thermometer and cook over medium heat at a moderate steady rate, stirring occasionally, until thermometer registers 225 degrees F, (20 to 22 minutes). Continue cooking for 3 minutes, holding the temperature of the mixture at 225 degrees F. Remove from heat. Stir in food coloring. Pour into prepared dish. Cool slightly. Cover and chill overnight.
  3. To serve, sprinkle a piece of parchment paper with 1/4 cup granulated sugar. Turn the uncut mixture out onto the sugar; remove top parchment paper. Cut into 1-inch cubes with a clean, hot knife. Sprinkle cut pieces with remaining 1/4 cup sugar and toss to coat each piece completely. Serve immediately.

Store in a tightly covered container for up to 2 weeks in the refrigerator. Coat with sugar just before serving.
