Preheat oven to 325 degrees F. Trim fat from meat. For rub, in a small bowl combine salt, 1/4 teaspoon sage, and pepper. Sprinkle mixture evenly over meat; rub in with your fingers. Place meat on a rack in a shallow roasting pan. Insert an oven-going meat thermometer into center of meat. Roast for 1 hour.
Meanwhile, for sauce, in a medium saucepan combine cranberry sauce, orange peel, orange juice, and 1/4 teaspoon sage. Bring to boiling; reduce heat. Simmer, uncovered, about 10 minutes or until mixture is slightly thickened.
Spoon about 1/4 cup of the sauce over meat. Roast for 15 to 30 minutes more or until thermometer registers 145 degrees F. Remove meat from oven. Cover with foil and let stand for 10 minutes (temperature of the meat will rise during standing time). Slice meat and serve with the remaining sauce.
