Copycat Brown Cilantro-Lime Rice

Directions

  1. Bring 4 cups water to a boil in a large pot. Add rice, bay leaf, and oil if using.
  2. Reduce heat to low, cover, and cook for 45 minutes.
  3. Remove bay leaf. Stir in cilantro, lime juice, and lemon juice. Season to taste with salt.

Try REFINED coconut oil (unrefined will give a sweet coconut flavor to it - I prefer to NOT have that additional flavor) - it has a high smoke point, so it won't burn in the pot - or rice cooker. I would think that probably any oil would do, as there is a bunch of water in the recipe (so shouldn't be a burn problem) - try one who's flavor you like (or no flavor!)
Haven't tried this recipe yet, so no star rating, but I am planning on trying it! Looks good - and I LOVE Qdoba's cilantro-lime rice.

I have a question. Would like to know what I could substitute for the bran oil. I have never seen this product in any grocery store I shop in.
