- Grease 9x9x2-inch baking pan; set aside. In a medium bowl, beat butter with an electric mixer on medium to high speed for 30 seconds. Add 1/2 cup brown sugar; beat until combined. Add flour; beat until crumbly. Press mixture into the bottom of the prepared baking pan. Bake in a 350 degree F oven for 10 minutes.
- Meanwhile, for filling, in a small bowl, combine eggs, 1/2 cup brown sugar, the lemon peel, lemon juice, and salt. Beat with an electric mixer on medium speed for 2 minutes or until combined. Stir in nuts, coconut, and raisins.
- Pour filling over baked layer. Bake for 18 to 20 minutes or until lightly browned around edges and center is set. Cool in pan on a wire rack. Cut into bars. Makes about 20 bars.
