A Christmas classic than can be savored year round. Change up the flavor by adding chocolate or peppermint to these simple cookies.

Ingredients

  • 1 ½ cup butter, softened

  • 1 cup granulated sugar

  • 1 teaspoon baking powder

  • 1 egg

  • 1 teaspoon vanilla

  • ¼ teaspoon almond extract (optional)

  • 3 ½ cup all-purpose flour

  • Colored sugar (optional)

  • 1 recipe Powdered Sugar Icing (optional)

Powdered Sugar Icing

  • ½ cup powdered sugar

  • 2 teaspoon milk

  • ¼ teaspoon vanilla

  • Milk

Directions

  1. Preheat oven to 375 degrees F. In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add granulated sugar and baking powder. Beat until combined, scraping sides of bowl occasionally. Beat in egg, vanilla, and, if desired, almond extract until combined. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour.

  2. Force unchilled dough through a cookie press onto an ungreased cookie sheet. If desired, sprinkle cookies with colored sugar. Bake for 8 to 10 minutes or until edges are firm but not brown. Transfer to a wire rack and let cool. If desired, drizzle cookies with Powdered Sugar Icing.

  3. Makes about 84 cookies.

Powdered Sugar Icing

  1. In a small bowl stir together powdered sugar, 2 teaspoons milk, and the vanilla. Stir in enough additional milk, 1 teaspoon at a time, to make icing a drizzling consistency.

Chocolate Spritz:

Prepare as above, except reduce flour to 3-1/4 cups and add 1/4 cup unsweetened cocoa powder with the sugar.Nutrition Facts per cookie: 58 cal., 4 g total fat (2 g sat. fat), 12 mg chol., 28 mg sodium, 6 g carbo., 0 g fiber, 1 g pro.Daily Values: 2% vit. Nutty Spritz:

Prepare as above, except reduce sugar to 2/3 cup and flour to 3-1/4 cups. Peppermint Spritz:

Prepare as above, except substitute with 1 teaspoon of peppermint extract or 14 drops of peppermint oil for the vanilla and almond extracts.
