Directions

  1. In a large mixing bowl, beat butter with an electric mixer on medium to high speed for 30 seconds. Add sugar, vanilla, and salt. Beat until well combined. Then, beat in as much of the flour as you can. With a wooden spoon, stir in remaining flour.
  2. Shape dough into 1-inch balls. Place 1 inch apart on an ungreased cookie sheet. Flatten balls slightly with the palm of your hand. Press your thumb into the center of each ball (edges will have cracks). Place about 1/4 teaspoon of jelly in center of each ball. Top with a pecan half.
  3. Bake in a 400 degree F oven for 8 to 10 minutes or until edges are lightly browned. Transfer cookies to a wire rack and let cool. Just before serving, sprinkle cookies with powdered sugar, if desired. Makes 48 cookies.
