Directions

  1. Lightly grease a cookie sheet; set aside. In a medium mixing bowl beat egg whites, vanilla, and cream of tartar with electric mixer on high speed until soft peaks form (tips curl). Add the sugar, 1 tablespoon at a time, beating until stiff peaks form (tips stand straight). Fold in the chocolate pieces.
  2. Drop mixture by rounded teaspoons 2 inches apart on the prepared cookie sheet. Bake in a 300 degree F. oven about 20 minutes or until firm and bottoms are very lightly browned. Transfer cookies to a wire rack and let cool. If desired, drizzle cookies with melted chocolate. Makes 36 cookies.

Bake and cool cookies completely. In an airtight or freezer container, arrange cookies in a single layer; cover with a sheet of waxed paper. Repeat layers, leaving enough air space to close container easily. Seal, label and freeze up to 1 month.
