- Beat butter and shortening in a mixing bowl with an electric mixer on medium speed for 30 seconds. Add sugar and baking powder; beat until combined. Beat in egg and milk. Beat in the cheese and as much of the flour as you can with the mixer. Stir in any remaining flour with a wooden spoon.
- Divide dough in half; shape each half into an 8-inch-long roll. Flatten sides of the rolls to make the rolls square. Wrap in clear plastic wrap; chill for 4 to 24 hours.
- Cut the square rolls into 1/4-inch-thick slices. Place slices 2 inches apart on an ungreased cookie sheet. Bake in a 375 degree F oven for 7 to 9 minutes or until edges are firm and bottoms are lightly browned. Transfer cookies to wire racks to cool. Makes about 60 cookies.

Store baked cookies in an airtight container in the refrigerator or freezer. Or, if desired, wrap and freeze the square rolls of dough up to 1 month; let dough stand at room temperature for 10 to 15 minutes before slicing and baking.
