This cute dessert recipe packs a caffeine pick-me-up! A mini ice cream cone lined with chocolate for extra yum, filled with two of your favorites--ice cream and coffee--is a perfect mid-day wake up treat or dessert (use decaf if it's late).

Ingredients

  • 6 - 8 ounce semisweet chocolate, melted

  • 6 miniature flat-bottom ice cream cones

  • Finely chopped or ground nuts, such as hazelnuts or almonds (optional)

  • 6 small scoops vanilla ice cream

  • 1 cup hot espresso or strong brewed coffee

Directions

  1. Spoon melted chocolate into each cone and carefully coat the inside using the back of a spoon. Dip outer rims of cones into remaining melted chocolate, about 1/2-inch deep. Allow excess to drip back into the bowl. If desired, dip cone rims into nuts. Place on a wax paper-lined baking sheet and freeze about 15 minutes or until chocolate is set.

  2. Spoon a very small scoop of ice cream into each cone. Pour hot espresso over each ice cream scoop and serve immediately.
