Citrus Wheat Berry Salad

Chewy wheat berries are the base of this fruit-filled salad that will be the perfect side dish to your outdoor gatherings.

Ingredients

  • 4 cup vegetable broth

  • 2 cup wheat berries

  • 1 ½ cup sliced celery

  • 1 ½ cup mixed fresh berries, such as raspberries, blueberries, and/or halved strawberries

  • 2 navel oranges, peeled and sliced

  • 2 clementines, peeled and sliced

  • ½ cup chopped green onions

  • ½ cup chopped fresh Italian parsley

  • cup olive oil

  • 3 tablespoon grapefruit or orange juice

  • 3 tablespoon orange juice

  • 1 tablespoon lemon juice

  • 1 tablespoon honey or maple syrup

  • 2 cloves garlic, minced

  • 1 teaspoon salt

  • ½ teaspoon black pepper

Directions

  1. In a large saucepan combine broth and wheat berries. Bring to boiling; reduce heat. Simmer, covered, 1 hour or until tender. Drain and cool. Cover and chill 2 hours.

  2. In an extra-large bowl combine wheat berries and next six ingredients (through parsley). For dressing, in a small bowl whisk together remaining ingredients.

  3. Pour dressing over wheat berry mixture; toss to coat. Top with additional parsley.

To Make Ahead

Store the cooked wheat berries in refrigerator up to 3 days and the dressing in refrigerator up to 5 days.
