Directions

  1. Preheat oven to 425 degrees F. Sprinkle pork tenderloin with cumin. Place tenderloin on a rack in a shallow roasting pan. Roast for 25 to 35 minutes or until done (155 degrees F).
  2. In a small bowl combine salsa and mandarin oranges. Serve mixture over pork. Garnish with parsley and serve with citrus wedges.
