  • In a small bowl stir together verjus, oil, lime juice, shallot, 1/2 tsp. salt, and 1/4 tsp. black pepper. Let stand 20 minutes or up to 8 hours. To serve, in an extra-large bowl combine cabbage, grapefruit, cucumber, onion, tomatoes, and jalapeño. Pour vinaigrette and shallots over cabbage mixture. Serve with a slotted spoon. Serves 12.
