Citrus-Cucumber Slaw with Pickled Shallots

The flavor of sweet-tart verjus hits somewhere between vinegar and wine. Much like wine, verjus is available in both red and white varietals and is likely stocked near the other gourmet vinegars at your grocery store.

Ingredients

  • ½ cup white verjus

  • ¼ cup vegetable oil

  • 3 tablespoon lime juice

  • 1 large shallot, thinly sliced

  • ½ teaspoon salt

  • ¼ teaspoon freshly ground black pepper

  • 5 cup shredded green, red, and/or napa cabbage

  • 2 grapefruit and/or pomelos, peeled, seeded, and sectioned

  • 1 English cucumber, sliced

  • ½ cup thinly sliced red onion

  • 1 cup seeded and chopped roma tomatoes

  • 1 large fresh jalapeno pepper, seeded and finely chopped

Directions

  1. In a small bowl stir together verjus, oil, lime juice, shallot, 1/2 tsp. salt, and 1/4 tsp. black pepper. Let stand 20 minutes or up to 8 hours. To serve, in an extra-large bowl combine cabbage, grapefruit, cucumber, onion, tomatoes, and jalapeño. Pour vinaigrette and shallots over cabbage mixture. Serve with a slotted spoon. Serves 12.
