Directions

  1. Preheat oven to 400 degrees F. Grease twelve 2-1/2-inch muffin cups or line with paper bake cups; set aside. In a medium bowl pour the boiling water over cereal. Stir to moisten cereal; set aside.
  2. In another medium bowl combine flours, baking powder, orange peel, lemon peel, baking soda, and salt. In a large bowl whisk together egg, buttermilk, oil, honey, and brown sugar. Add undrained cereal and the flour mixture to buttermilk mixture, stirring just until moistened.
  3. Spoon batter into prepared muffin cups, filling each three-fourths full. Bake for 14 to 18 minutes or until a toothpick inserted in centers comes out clean. Cool in muffin cups on a wire rack for 5 minutes. Remove from muffin cups. Serve warm.

To make 1 cup sour milk, place 1 tablespoon lemon juice or vinegar in a glass measuring cup. Add enough fat-free milk to make 1 cup total liquid; stir. Let stand for 5 minutes before using.

Prepare as directed through Step 2. Cover and chill for up to 3 days. Continue as directed in Step 3, except bake muffins for 20 to 22 minutes or until a toothpick inserted in centers comes out clean.
