Cinnamon-Walnut Cracker Bars

Leave the oven off in favor of these no-bake cookie bars. The sweet-and-salty combo is one we can never resist and this recipe layered with salty crackers and butter and brown sugar and chocolate for sweetness is no exception.

Ingredients

  • 80 rich rectangular crackers (2 sleeves)

  • ¾ cup butter

  • ¾ cup packed brown sugar

  • ¼ cup milk

  • 1 teaspoon ground cinnamon

  • 1 egg, lightly beaten

  • 1 cup chopped toasted walnuts

  • 4 ounce bittersweet chocolate, melted

Directions

  1. Line a 9-inch square baking pan with foil, extending foil over edges. Line bottom of pan with some of the crackers, breaking to fit as needed. Reserve the same number of whole crackers for top as used for bottom. Finely crush the remaining crackers (should have about 1 cup).

  2. In a medium saucepan combine butter, brown sugar, milk, cinnamon, and egg. Cook and stir constantly over medium until mixture is just bubbly. Remove from heat. Stir in walnuts and crushed crackers. Cool slightly.

  3. Spoon walnut mixture over crackers in pan; carefully spread evenly. Place reserved whole crackers on top to match bottom crackers. Spread melted chocolate over top crackers. Cover and chill at least 4 hours or until firm. Use foil to lift out uncut bars. Cut into bars.
