Cilantro Rice

Directions

  1. In a large saucepan combine broth, rice, garlic, and, if desired, chile pepper. Bring to boiling; reduce heat. Simmer, covered, for 40 to 45 minutes or until rice is tender and liquid is absorbed. Remove from heat. Let stand, covered, for 5 minutes. Stir in cilantro and green onion tops; sprinkle with lime peel.

Because chile peppers contain volatile oils that can burn your skin and eyes, avoid direct contact with them as much as possible. When working with chile peppers, wear plastic or rubber gloves. If your bare hands do touch the peppers, wash your hands and nails well with soap and warm water.
