In a large skillet cook chorizo until browned. Drain well; cool. In a medium bowl beat cream cheese, cheddar cheese, mayonnaise, and lemon juice with a mixer until nearly smooth, about 2 to 3 minutes, scraping bowl as needed. Stir in chorizo. Chill, covered, up to 1 hour. Cut celery stalks into 3-inch pieces. Fill each with about 1 Tbsp. cheese mixture. Top with dates.
