You read that right, two avocados are the first ingredient of this chocolate pudding recipe. Don't let it scare you off. The avocado adds rich creaminess and the flavor is masked by cocoa powder and mint extract.

Directions

  1. In a blender or food processor bowl, combine avocados, milk, cocoa powder, honey, and vanilla. Cover and blend or process until smooth. Divide among four dessert dishes. Serve immediately or cover and chill for up to 2 days.
