Chocolate Chip Energy Bars

Directions

  1. Preheat oven to 300 degrees F. Line a 9x5-inch loaf pan with foil, extending foil over edges. Lightly coat foil with cooking spray. In a shallow baking pan combine oats and walnuts. Bake 15 to 18 minutes or until light brown, stirring occasionally; cool.
  2. Increase oven temperature to 350 degrees F. In a medium bowl combine next six ingredients (through salt). Stir in oat mixture and remaining ingredients until combined. Spread in prepared loaf pan.
  3. Bake 20 minutes or until firm in center and light brown. Using foil, lift uncut bars out of pan. While still warm, cut crosswise into 1 1/2-inch bars; cool. Store in an airtight container at room temperature.
