Grease an 8-inch square baking pan. In a small bowl stir together 1 Tbsp. of the flaxseed meal and 3 Tbsp. water. In another small bowl mix together coconut milk and apple cider vinegar. Let both mixtures stand 10 minutes. In a medium bowl combine flour, the remaining 3 Tbsp. flaxseed meal, the cocoa, baking powder, soda, and 1/4 tsp. kosher salt. In another medium bowl beat coconut oil and sugar with a mixer on medium until combined. Beat in flaxseed mixture until well combined. Beat in mashed banana and vanilla until combined. Alternately add flour mixture and coconut milk mixture, beating on low after each addition just until combined. (Batter may appear curdled.) Spread batter in prepared pan. Bake 25 to 30 minutes or until a toothpick inserted in center comes out clean. Cool completely in pan on wire rack. Before serving, drizzle with Tahini Icing, top with Caramelized Banana Slices, and sprinkle with toasted sesame seeds and/or flaxseed meal. Serves 9. Tahini Icing In a small bowl whisk together 1/3 cup powdered sugar and 3 Tbsp. tahini. Whisk in 2 to 3 tsp. coconut milk or milk, 1 tsp. at a time, until drizzling consistency. Caramelized Banana Slices In a 10-inch skillet melt 1 Tbsp. coconut oil or butter over medium. Stir in 2 Tbsp. packed brown sugar, 1/4 tsp. ground cinnamon, and a pinch of kosher salt. Add 1 sliced banana; cook about 2 minutes or until slices are golden, turning once.
