Instead of more traditional ground beef or beef roast, this Chipotle Turkey Chili starts with lean turkey breast tenderloins. For even more protein (35 grams per serving!), we add lentils to this chipotle chili recipe.




  • In a large Dutch oven brown the turkey in hot oil over medium-high heat. Remove; set aside. Add the onions, poblano peppers, and salt; cook and stir for 3 minutes. Add the turkey, chipotle pepper, chili powder, tomato sauce, undrained tomatoes, chicken broth, and lentils. Bring to boiling; reduce heat. Simmer, covered, for 30 minutes or until lentils are tender, stirring occasionally. Serve with sour cream, jalapeno peppers, and additional chile powder, if desired.



Because hot chile peppers contain volatile oils that can burn your skin and eyes, avoid contact with chiles as much as possible. When working with chile peppers, wear plastic or rubber gloves. If your bare hands do touch the chile peppers, wash your hands well with soap and water.
