Chipotle Steak with Tomatoes

Directions

  1. Lightly sprinkle steaks with salt and pepper. Spread each with 1 teaspoon of the adobo sauce.
  2. For a charcoal grill, place steaks on the rack of an uncovered grill directly over medium coals. Grill until desired doneness, turning once halfway through grilling. Allow 10 to 12 minutes for medium-rare (145 degrees F) or 12 to 15 minutes for medium (160 degrees F). (For a gas grill, preheat grill. Reduce heat to medium. Place steaks on grill rack over heat. Cover; grill as above.)
  3. Meanwhile, for dressing, in a screw-top jar combine the chopped chipotle pepper, oil, and vinegar. Shake to combine.
  4. Serve steaks with tomato and avocado slices. Top with onion and drizzle with dressing.

*Tip:

If you prefer a creamy dressing, omit the oil and vinegar, and stir the chipotle pepper into 1/2 cup bottled ranch salad dressing.
