Learn about BHG's Editorial Process Published on March 1, 2022 Print Rate It Share Share Tweet Pin Email Photo: Kelsey Hansen Hands On Time: 10 mins Total Time: 40 mins Servings: 4 Yield: 12 slices pork plus 5 cups salad Jump to Nutrition Facts Ingredients 1 - 1 ½ pound pork tenderloin 4 teaspoon chipotle seasoning blend 1 ½ pound summer squash, halved or quartered and cut into strips 3 tablespoon olive oil 1 lime, zested and halved 8 ounce green and/or wax beans, trimmed, halved, and blanched ½ cup queso fresco, crumbled ½ cup chopped fresh cilantro 2 tablespoon finely chopped red onion Directions Place a 15×10-inch baking pan in the oven. Preheat oven to 425°F. Rub pork with 2 tsp. of the chipotle seasoning. In a large bowl toss squash with remaining 2 tsp. seasoning and 1 Tbsp. olive oil. Carefully arrange pork tenderloin on hot pan. Bake 15 minutes. Add squash and lime halves, cut sides down, to pan. Bake 10 minutes more or until squash is crisp-tender, lime is charred, and pork is done (145°F). Cover pork loosely with foil; let rest 5 minutes. For salad: Coarsely chop squash and combine with green beans in a large bowl. Add lime zest, queso fresco, cilantro, red onion, and 2 Tbsp. olive oil. Squeeze lime halves over salad and toss to coat. Slice pork and serve with salad. Serves 4. Blanched Beans To blanch fresh beans, boil 2 minutes, then plunge into a large bowl of ice water. Chipotle Seasoning Blend If you choose a salt-free seasoning blend, such as Mrs. Dash®, season pork with 1/4 teaspoon salt and season squash with 1/4 teaspoon salt before grilling. Or, for DIY seasoning blend, combine 2 tsp. ground chipotle pepper, 2 tsp. garlic powder, 1 tsp. onion powder, 1 tsp. dried oregano, and 1 tsp. salt.
