Directions

  1. In a 4- to 5-quart slow cooker combine broth, whipping cream, wine, and garlic. Cover and cook on low-heat setting for 4 to 5 hours.
  2. Meanwhile, in a medium bowl stir together butter and flour until a paste forms. Stir into broth mixture until combined. Cover and cook about 30 minutes more or until slightly thickened.
  3. Whisk chipotle peppers into broth mixture. Gradually whisk in both cheeses until smooth. Serve with dippers.
