Waldorf Chicken Salad
- For dressing, in a small bowl stir together the yogurt and spice. Set aside.
- In a medium mixing bowl toss the apple with the lemon juice. Stir in the chicken or turkey; celery; raisins, cherries, cranberries, or dates; and grapes. Add the dressing. Stir until thoroughly combined. Cover and chill for 30 minutes to 1 hour to blend flavors.
- To serve, line 2 individual salad bowls or plates with lettuce leaves. Stir the chicken mixture. Spoon chicken mixture atop lettuce. Sprinkle with almonds, peanuts, walnuts, or pecans. Makes 2 servings.
