Cook broccoli or asparagus according to package directions; drain and keep warm. Meanwhile, rinse chicken or turkey; pat dry. With a sharp knife cut chicken or turkey crosswise into 1/2-inch strips.
In a large skillet cook chicken in hot oil over medium-high heat for 3 to 4 minutes or until tender and no longer pink. Drain off fat. Stir in pasta sauce. Simmer 2 to 3 minutes or until sauce is heated through. Place toasted muffin or bagel halves on plates. Arrange broccoli spears atop. Spoon chicken and sauce over all. If desired, sprinkle with pepper. Makes 4 servings.
