  • Preheat the broiler. Season chicken with salt and pepper. Place, skin side down, on a rack in an unheated broiler pan. Place under the broiler 5 to 6 inches from the heat. Broil about 20 minutes or until chicken is light brown.

  • Meanwhile, for glaze, in a small mixing bowl combine marmalade, green onion, vinegar, soy sauce, and ginger.

  • Turn chicken skin side up. Broil 10 to 20 minutes more or until chicken is no longer pink. Brush with blaze the last 5 to 10 minutes. Transfer to a serving platter, then brush on any remaining glaze. Garnish with onion brushes and orange twists, if desired. Makes 4 servings.

Grilled Orange-Ginger Glazed Chicken:

Prepare Orange-Ginger Glazed Chicken as above, except place chicken, skin side down, on an uncovered grill, directly over medium coals for 20 minutes. Turn chicken skin side up. Grill 10 to 20 minutes more or until chicken is tender. Brush with glaze the last 5 to 10 minutes.
