Honey-Glazed Chicken with Peppers and Goat Cheese
Chicken Breast Option
Substitute 12 small bone-in chicken breast halves for whole chickens. Stuff cheese mixture under skin and brush with oil. Omit garlic and lemons. Sprinkle with salt and pepper. Place on rack in shallow roasting pan. Roast at 375 degrees F for 45 to 55 minutes (170 degrees F), brushing with honey mixture the last 10 minutes of roasting. Brush with remaining honey mixture before serving.
