Directions

  1. Sprinkle chicken with about half of the jerk seasoning; toss gently to coat. Cut any large snap peas in half crosswise.
  2. On 2 long or 4 short skewers, alternately thread the chicken, sugar snap peas, pineapple, and sweet pepper, leaving about 1/4 inch between pieces. For sauce, in a small saucepan stir the remaining jerk seasoning into plum preserves. Cook and stir just until preserves are melted; set aside.
  3. For a charcoal grill, place kabobs on the rack of an uncovered grill directly over medium coals. Grill for 8 to 12 minutes or until chicken is no longer pink and vegetables are tender, turning once and brushing occasionally with sauce the last 5 minutes of grilling. (For a gas grill, preheat grill. Reduce heat to medium. Place kabobs on grill rack directly over heat. Cover and grill as above.) Or, place kabobs on the unheated rack of a broiler pan. Broil 4 to 5 inches from the heat for 8 to 12 minutes, turning once and brushing occasionally with sauce the last 5 minutes of broiling. Makes 2 servings.
