Crispy Chicken Fiesta Platter
- In a plastic or paper bag combine flour, chili powder, garlic powder, red pepper, and 1/2 teaspoon salt. Add chicken, 2 or 3 pieces at a time, to the bag, then shake to coat.
- In a 12-inch skillet heat oil or shortening. Add chicken.
- Cook, uncovered, over medium-low heat 50 to 60 minutes or until chicken is longer pink. Turn occasionally. Remove chicken, then drain on paper towels.
- Arrange lettuce, tomato, and tortilla chips on a platter. Place chicken on top. Garnish with a jalapeno pepper, if desired. Serves 6.

Fried Chicken Fiesta Platter:
Prepare Crispy Chicken Fiesta Platter as above, except cook, uncovered, over medium heat 10 to 15 minutes, turning to brown evenly. Reduce heat, then cover tightly. Cook 30 minutes. Uncover, then cook 5 to 10 minutes more or until tender. Remove chicken, then drain on paper towels.
Easy Chicken Fiesta Platter:
Prepare Crispy Chicken Fiesta Platter as above, except use a 12-inch ovenproof skillet. Cook chicken, uncovered, over medium heat 10 to 15 minutes, turning to brown evenly. Drain off fat. Transfer skillet to a 375 degree F oven. Bake, uncovered, 30 to 35 minutes or chicken is no longer pink. Do not turn during baking.
