Place crackers in a plastic bag, then use a rolling pin to crush. Transfer to a pie plate or shallow bowl. Stir in caraway seed and pepper. Set aside.
Brush chicken with milk. Coat with crumb mixture. Place, skin side up, in an ungreased 13x9x2-inch baking pan.
Bake in a 375 degree F oven 45 to 55 minutes or until chicken is no longer pink. Transfer to a platter. If desired, garnish with kale. Makes 4 servings.
