Chicken with Sourdough Stuffing
- For stuffing, in a large bowl, combine bread cubes, tomato, carrot, thyme, and pepper. Drizzle with broth, tossing gently to moisten. (Stuffing will not be completely moistened.)
- Place chicken in a 4- to 5-quart slow cooker. Sprinkle with leek. Lightly pack stuffing on top of chicken.
- Cover and cook on low-heat setting for 6 to 6 1/2 hours or on high-heat setting for 3 to 3 1/2 hours.
