Ingredients

  • 2 10 ounce pkg. cherry tomatoes

  • ¾ cup pitted Nicoise olives

  • cup dry red wine

  • teaspoon sea salt

  • teaspoon freshly ground black pepper

  • Dash ground nutmeg

  • 6 6-8 ounce skinless, boneless chicken thighs

  • 1 tablespoon olive oil

  • ½ of a 15-oz. carton light ricotta cheese

  • ½ cup grated Parmesan cheese

  • 1 egg, lightly beaten

  • ¼ cup all purpose flour

  • 1 tablespoon snipped fresh oregano

  • Dash sea salt

  • Dash ground nutmeg

  • Dash freshly ground black pepper

  • 2 tablespoon grated Parmesan cheese (optional)

Directions

  1. Preheat oven to 400°F. In a 3-qt. rectangular baking dish combine tomatoes, olives, wine, 1/8 tsp. salt, 1/8 tsp. pepper, and dash nutmeg. Bake 20 minutes.

  2. Pat chicken dry with paper towels. Brush with oil. Add chicken to tomato mixture. Bake 20 minutes.

  3. Meanwhile, for dumplings, in a medium bowl combine next eight ingredients (through dash pepper) just until mixture comes together.

  4. Drop dumpling dough from a tablespoon onto hot chicken mixture. If desired, sprinkle with 2 Tbsp. Parmesan cheese. Bake 20 minutes more or until chicken is done (at least 170°F). Let stand 5 minutes before serving. Sprinkle with additional fresh oregano.
