In a 3-qt. rectangular baking dish combine tomatoes, olives, wine, 1/8 tsp. salt, 1/8 tsp. pepper, and dash nutmeg. Bake 20 minutes. Pat chicken dry with paper towels. Brush with oil. Add chicken to tomato mixture. Bake 20 minutes. Meanwhile, for dumplings, in a medium bowl combine next eight ingredients (through dash pepper) just until mixture comes together. Drop dumpling dough from a tablespoon onto hot chicken mixture. If desired, sprinkle with 2 Tbsp. Parmesan cheese. Bake 20 minutes more or until chicken is done (at least 170°F). Let stand 5 minutes before serving. Sprinkle with additional fresh oregano.
